Mongolia is well known for its staple diet of sheep. While beef is also occasionally offered, both sheep and mutton are widely available throughout the country. One of the more noteworthy dishes is a “Khuushuur” – a fried pancake that is stuffed with both mutton and onion. A typical meal may include three or four of these. Similarly, “buuz” are large dumplings also stuffed with mutton and onion and widely available. Visitors should also consider trying a traditional boodog – a traditional goat or marmot barbecue that is prepared over a traditional stone fire with onions, potatoes, carrots and mutton chops. These types of barbecues are widely available throughout the Mongolian countryside.
